Cherrystone clams - East Coast medium-sized clam is of the hard-shell variety. 

Hard oval-shaped shells covered with concentric strips,
the interior of the shell is white and it includes a dark purple muscle which has three cardinal teeth. 
 

A cherrystone clam, five to six years old and two to three inches in diameter,

is the middle child in the quahog family.
They are meaty and lean, with a pleasing, chewy bite.

They are sweet, buttery and have a mildly salty flavor with large-sized bellies,

that are traditionally served raw as sashimi, larger ones are delicious steamed or grilled.
